Isle of Wight Pearl is delighted to announce the appointment of Mark Wyatt as its new Head Chef at the iconic, and recently revamped, Pearl Café. Mark’s arrival marks a clear new direction for the café, championing fine-dining quality food designed to be enjoyed every day, overlooking what are widely regarded as some of the Island’s best sea views.
Alongside a completely refreshed menu, the Pearl Café now offers a range of weekday food promotions, making quality, chef-led dishes accessible to everyone. Island food lovers can enjoy two of Mark’s new main meals for just £20 on Mondays, a half-price brunch on Thursday, a free glass of wine on Wednesdays, and kids eat for £1 every Tuesday.

A highly respected and classically trained chef, Mark brings a wealth of culinary experience, having spent five years leading kitchens with two AA Rosettes and a Michelin Bib Gourmand. He began his career in North Yorkshire before spending three years at The Savoy Hotel in London, where he refined his classical techniques and developed a passion for high-quality, ingredient-led cooking.
Since joining, Mark has given the menu a complete overhaul, elevating familiar favourites into interesting, flavourful, fine-dining-inspired dishes that guests are already returning for.

Speaking about the role, Mark said: “Isle of Wight Pearl isn’t just a café – it’s an iconic Island destination with incredible views and a special story. My aim is to take the relaxed café experience people love and elevate it with the creativity and attention to detail you’d expect from fine dining, without losing that welcoming, Island feel.”
New dishes introduced by Mark and the team include a gourmet hash brown, freshly made crab cakes, beef with Guinness and dumplings, and beer-battered fish and chips with homemade tartare and charred lemon. To name a few!
Looking ahead, the Pearl Café plans to expand its food offering with seasonal specials, redeveloped afternoon teas, and a brand-new events space. Together, these developments will position the café as a social hub where food, friends and Island life come together.

Mark added: “Food has a way of bringing people together. Whether it’s a casual brunch, a celebration, or a special event, I want the Pearl Café to be a place where people come to make memories as well as enjoy great food.”
